Whisky may play sustainability role
A Scottish start-up, Horizon Proteins, has been working to generate a protein ingredient from a co-product of malt whisky.
The effort involves the use of yeast and protein from barley used in the production process. One goal of the project is to reduce the reliance on imported feed proteins, the company told us.
